Such a lyrical post ... I enjoyed reading it immensely. With all of my touring in shows, I've always shopped around for what each city had to offer and the answer to the ultimate question ... Could I live there? Toronto is one of the places I very much could make home and for many of the reasons you state. I would also agree that Seattle and Vancouver have an energy that you don't find in, for instance, Houston.
My list of cities other than Seattle or Toronto that I could call home .... Chicago, Minneapolis/St Paul, Boston, Portland .... Take out a cooler climate (which I prefer) ... and I'd add San Diego, Austin and Savannah ...
